Honestly, it comes down to the cook. A well done steak can feel like you're chewing through cardboard and a rare steak can melt in your mouth. If it's cooked right, the danger of disease is almost nothing. Sure it's still something, but the amount of dirt, droppings, and insects in your other food is also not nothing.
Cooked meat certainly has advantages over uncooked meat aside from disease. i.e. ease of digestion, nutritional value, etc. But overcooked meat can be dangerous. In fact, there are studies which show overcooked meat is more dangerous than raw meat due to the production of carcinogens. The University of Minnesota has released data that has shown well-done charred meat will increase your risk of pancreatic cancer by 60%! The immolation of amino acids produces heterocyclic amines, which is a known cancer causing agent. The general rule of thumb for food is the closer to raw, the better. Of coarse some have limits and there are exceptions, but for steaks, this is pretty much spot on. |

When I went on a field trip to Quebec, Canada, I had some smoked buffalo.
It really kicked me in the ass. It i possible my piece wasn't smoked right, or, that I am allergic to buffalo, but I spent the day after barfing my brains up. And then eating maple toffee.

I can eat rare, and used to eat medium rare meat, but I'm not a fan of blood, lol. |

My grandfather hated bony fish, he loved either big fish or those without bones so he could chew "steaks". I might have inherited that in an unusual way - I have a fear of putting sharp objects I could swallow in my mouth (i.e., needles) and the spines of some bony fish skeletons, which I presume are cartilaginous (in tilapia) really get my nightmare machine rolling.
I'll look into monkfish but it seems really exotic. No fish-monger I know of ever stocks something like that.

Nah, Tilapia would have calcified skeletons. But fair enough, I can understand not wanting to risk bones. This is why things like Tuna/Swordfish steaks are good, and they have more of a 'meat' texture as opposed to a 'fish' one.
Monkfish is fairly common around here (but this is England, you're never too far from the sea), it's just too expensive to eat regularly. |

I've heard of monkfish thanks to RuneScape. Unfortunately, I'm not much of a seafood eater, especially saltwater fish, so there's that.
If by some stupid chance you have someone from Bengal who knows how to cook who lives close to you, Dave, ask him/her about a "Lobster malai curry." I detest Bengali cooking and hate lobsters in general but a well made Lobster malai curry is amazing. If you're looking for recipes btw google "Chingri macher malai curry." 'Chingri mach" being lobster in Bengali. :p

I'm very used to venison living in the middle of PA, and if prepared right it makes a great steak. Best rare thing I've ever had was monkey brain though. It was delicious. Not even kidding. If you ever get the chance to try it, do so, though it is understandable if it grosses you out. Also, this thread just brings back how many things I've eaten that a lot of people haven't. I used to eat octopus on a weekly basis back when I was working multiple jobs and could buy any food I wanted. I do want to try Hake sometime, one of many fish I have yet to get my hands on that I'd like to try. |

Had swordfish last night, was spectacular. I don't generally like fish, but I loved it.
